Limoncello is a versatile liqueur. Some love to just drink it straight. But it’s capable of so much more. So for those who may find the lemon flavor a bit overpowering by itself, or those who just want to change it up – The Sparkling Limoncello Mojito will do you a solid. It combines two summertime staples by using your homemade Limoncello to put a spin on the classic mojito.
You’ll want to have all your ingredients handy, especially if you’re making this for multiple people. Per serving, you’ll need 10-12 mint leaves, a lime, Limoncello, white rum, Prosecco or extra dry sparkling wine and a lemon slice for garnish.
Place 10-12 mint leaves in the bottom of a clean, dry Collins glass. Quarter the lime, and squeeze the juice from two of the wedges over the mint leaves.
Muddle the mint leaves in the lime juice, just enough to expose the mint flavor without breaking the leaves apart entirely. Once they begin to tear, you’ve muddled enough.
Fill your glass with ice and add 2 oz. white rum and 2 oz. Limoncello.
Then, fill the glass with sparkling wine (about half a cup), add the remaining two lime wedges, and give it a gentle stir. Garnish with a lemon slice and mint leaf and enjoy.
SPARKLING LIMONCELLO MOJITO
10-12 mint leaves
2 oz. Limoncello
2 oz. white rum
4 oz. extra dry sparkling wine
1 lemon slice (for garnish)
- Place mint leaves in the bottom of a clean Collins glass.
- Squeeze the juice from ½ of a lime over the mint leaves and muddle.
- Fill glass with ice, add Limoncello, white rum and sparkling wine.
- Stir gently.
- Garnish with a lemon slice and mint leaf.
This recipe is a bit sweeter than your standard mojito. If you’re looking to tone down the sweetness or alcohol content, you can substitute club soda for sparkling wine.
